Marinade:
- 1/2 cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp champagne or apple cider vinegar
- 2 tsp honey
- 1–2 cloves garlic, grated
- 1/2 cup fresh basil, chopped
- 2 tbsp chopped fresh thyme
- Kosher salt and black pepper, to taste
- Chili flakes, to taste
Other Ingredients:
- 3 cups cherry tomatoes, halved
- 2–3 balls burrata cheese, at room temperature
- Grilled bread or crackers, for serving
Instructions
- Mix the Marinade: In a bowl, whisk together olive oil, balsamic vinegar, champagne vinegar, honey, garlic, basil, and thyme. Season with salt, pepper, and chili flakes.
- Marinate the Tomatoes: Add tomatoes to the marinade and toss to combine. Let them marinate for 30 minutes at room temperature or overnight in the fridge. Bring to room temperature before serving.
- Serve: Break the burrata over a serving bowl and arrange the marinated tomatoes around it. Serve with grilled or toasted bread.
