- 1 1/2 tsp. Dijon mustard, divided
- 1 1/2 tsp. yellow mustard, divided
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Coating
- 1/2 cup (60 g) all-purpose flour
- 1/2 cup finely ground Ritz cracker crumbs (from 15 to 20 crackers)
- 1/2 cup panko bread crumbs
- 1/4 tsp. garlic powder
- 1/2 tsp. dried parsley flakes
- Pinch of cayenne pepper (optional)
- 3/4 tsp. salt
- 1/4 tsp. black pepper
Other
- 2 eggs (for egg wash, beaten with remaining mustard and seasoning)
- Olive oil or other neutral cooking spray
- Ground paprika, for dusting
- Fresh dill, for serving
Instructions
- Air Fry the Eggs: Place 6 eggs in the air fryer basket and cook at 250°F for 17 minutes. Immediately transfer the eggs to an ice bath to cool, then peel.
- Prepare the Yolk Filling: Slice the peeled eggs in half lengthwise. Scoop out the yolks into a bowl and mash with mayonnaise, relish, 1 tsp Dijon mustard, and 1 tsp yellow mustard until smooth and creamy. Season with salt and pepper. Transfer the mixture to a piping bag or zip-top bag and refrigerate until ready to fill.
- Make the Coating Mixtures: Set up three shallow bowls: one with flour; one with beaten eggs mixed with remaining 1/2 tsp Dijon mustard, 1/2 tsp yellow mustard, salt, and pepper; and one with a mixture of finely ground Ritz crackers, panko breadcrumbs, garlic powder, dried parsley flakes, cayenne pepper (if using), 3/4 tsp salt, and 1/4 tsp black pepper.
- Coat the Egg Whites: Dip each egg white half first into the flour, then into the egg wash, letting excess drip off, and finally coat thoroughly with the breadcrumb mixture, pressing gently to adhere. Place coated egg whites on a baking sheet and spray them lightly on both sides with cooking spray.
- Air Fry the Coated Eggs: Arrange the coated egg whites in the air fryer basket without overcrowding. Cook at 390°F for 8 to 10 minutes, turning halfway through, until golden and crispy. Let cool slightly.
- Assemble and Serve: Arrange the crispy egg whites on a serving platter. Pipe the creamy yolk filling into each egg white half. Dust with ground paprika and garnish with fresh dill before serving.
Notes
- Ensure eggs are evenly spaced in the air fryer to achieve uniform cooking and crisping.
- Using a piping bag allows for neat and attractive filling of deviled eggs.
- Adjust cayenne pepper amount or omit based on preferred spice level.
- Leftover coated eggs can be kept warm in a low oven but are best served fresh for maximum crunch.
