- Preheat the Oven: Set your oven to 350° F (175° C) and line an 8-inch by 8-inch baking pan with parchment paper to prevent sticking and make removal easy.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, cinnamon, and nutmeg until fully blended. Set this mixture aside for later.
- Combine Wet Ingredients: In a large bowl, whisk the melted and cooled unsalted butter with the packed light brown sugar until the mixture is smooth and well combined, about 2 minutes. Then add the egg and vanilla extract, mixing until fully incorporated.
- Combine Batter: Gradually add the flour mixture to the wet ingredients, stirring gently just until all the flour is partially incorporated. Be careful not to overmix; it’s okay to leave some pockets of flour as these will be absorbed when you add the apples.
- Add Apples: Carefully fold in the chopped apple pieces, evenly distributing them without breaking them up too much to keep chunks intact.
- Bake the Blondies: Pour the batter into the prepared baking pan. The batter will be thick. Bake for 25 to 28 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the blondies to cool completely in the pan on a wire rack. Once cooled, cut into 16 squares and serve.
