  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, cinnamon, and nutmeg until fully blended. Set this mixture aside for later.
  3. Combine Wet Ingredients: In a large bowl, whisk the melted and cooled unsalted butter with the packed light brown sugar until the mixture is smooth and well combined, about 2 minutes. Then add the egg and vanilla extract, mixing until fully incorporated.
  4. Combine Batter: Gradually add the flour mixture to the wet ingredients, stirring gently just until all the flour is partially incorporated. Be careful not to overmix; it’s okay to leave some pockets of flour as these will be absorbed when you add the apples.
  5. Add Apples: Carefully fold in the chopped apple pieces, evenly distributing them without breaking them up too much to keep chunks intact.
