Ingredients
Scale
Oat Topping
- ½ cup rolled oats
- ½ tsp ground cinnamon
- 4 tbsp butter (melted and cooled slightly)
- ½ cup all-purpose flour (or gluten-free 1.1 flour)
- Pinch of salt
- Optional: ¼ cup chopped pecans (or substitute walnuts)
Apple Filling
- 5 cups Granny Smith apples (peeled and thinly sliced)
- ½ lemon (juiced)
- 1 cup sugar
- Pinch of salt
- 1 tsp ground cinnamon
- 1/16 tsp ground cloves
- 1/16 tsp ground nutmeg
- ½ cup water
- 2 tbsp cornstarch + 3 tbsp water (slurry)
Base
- 1 sourdough pizza crust (premade or test dough)
Instructions
- Prepare the oat topping: Melt the butter and let it cool slightly. In a bowl, mix rolled oats, ground cinnamon, flour, salt, and chopped nuts if using. Add the cooled butter and use your fingers or a fork to combine until large crumbs form. Optionally, spread the mixture thinly on a baking sheet and bake at 375°F (190°C) for 20–30 minutes until golden if you want a baked topping separate from the pizza.
- Make the apple filling: Peel and thinly slice the Granny Smith apples. Toss them with lemon juice to prevent browning. In a saucepan, add sliced apples, sugar, salt, cinnamon, cloves, nutmeg, and water. Cook over medium heat, stirring occasionally, until apples start to soften, about 5–7 minutes.
- Thicken the filling: Mix cornstarch with 3 tablespoons of water to create a slurry. Add this slurry to the apple mixture and cook for another 1–2 minutes until the mixture thickens to a sauce-like consistency. Remove from heat and let it cool slightly.
- Assemble the pizza: Preheat the oven to 375°F (190°C). Lay the sourdough pizza crust on a pizza stone or baking sheet. Spread the apple filling evenly over the crust, then sprinkle the oat topping evenly on top.
- Bake the apple crisp pizza: Place the assembled pizza in the preheated oven and bake for about 20 minutes, or until the crust is golden and the oat topping is crisp and slightly browned.
- Serve: Remove from oven and allow to cool for a few minutes before slicing. Enjoy your apple crisp pizza warm as a delicious fall dessert.
Notes
- Apple Crisp Pizza combines gooey cinnamon apples and a buttery oat topping over sourdough crust for a dessert that tastes like fall and is perfect for sharing.
- You can bake the oat topping separately if you prefer a crispier texture before assembling the pizza.
- Using tart Granny Smith apples balances the sweetness and prevents the dessert from being overly sugary.
- Feel free to substitute pecans with walnuts or omit nuts for a nut-free version.
- Leftover pizza can be stored in the refrigerator and gently reheated.
