Description

Delicious and easy-to-make Apple Pie Bars featuring a buttery crumb crust and warm cinnamon-spiced apple filling. Perfect for dessert or a sweet snack with a tender, crunchy texture and classic fall flavors.

Ingredients

Scale

Apple Filling

  • 550 g (4 and ½ cups – 4 medium apples) chopped cubed apples
  • 30 g (2 tablespoons) granulated sugar
  • 25 g (2 tablespoons and 1 teaspoon) all-purpose flour (or cornstarch as alternative)
  • 2 teaspoons lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Crust & Crumbles

  • 280 g (2 cups) all-purpose flour (dip and sweep method)
  • 185 g (¾ cup and 1 tablespoon) unsalted butter, cut into small cubes, cold
  • 105 g (½ cup) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat and prepare pan: Preheat the oven to 350°F (177°C). Grease an 8-inch (20 cm) square oven-proof dish and line the bottom and sides with parchment paper, allowing about 2 inches (5 cm) of overhang on each side for easy removal.
  2. Make the Apple Filling: Peel, core, and slice the apples into small pieces. Place the chopped apples into a medium bowl. Toss with lemon juice, sugar, flour (or cornstarch), cinnamon, and nutmeg to combine. Set aside.
  3. Prepare Crust & Crumbles: In a large bowl, combine flour, cinnamon, and sugar. Add the cold cubed butter and cover with the flour mixture to prevent sticking. Cut the butter into the flour using two forks, a pastry blender, or rub with your fingertips until mixture resembles coarse crumbs.
  4. Assemble the bars: Spread two-thirds of the crumb mixture evenly into the prepared baking dish using a floured spoon or your hands. Add the apple mixture evenly over the crust. Sprinkle the remaining one-third of the crumb mixture over the apples, pressing and squeezing some larger crumbles by hand.
  5. Bake: Bake in preheated oven for 55 minutes, until the top is golden brown and the crumb topping is crunchy.
  6. Cool and cut: Let cool completely at room temperature for 1 to 1.5 hours. For faster cooling, place in the freezer afterward until fully chilled. Using the parchment overhang, lift the bars out of the dish and cut into 16 squares.
  7. Storage: Store bars in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Notes

  • You can use 1 tablespoon of cornstarch instead of flour in the apple filling for a thicker filling.
  • For accurate flour measurement when using cups, use the dip and sweep method.
  • Use a sharp knife to cut the apple pie bars cleanly.
