Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat the oven to 350 degrees Fahrenheit. Lightly brush a baking sheet with a bit of canola oil to prevent sticking. You may want to have a second baking sheet handy if needed.
- Mix Filling: In a mixing bowl, combine the diced rotisserie chicken, coleslaw mix, and chopped peanuts. Stir together until well mixed and set aside.
- Make the Sauce: In a separate bowl, whisk together the creamy peanut butter, seasoned rice vinegar, soy sauce, and crushed red pepper until the sauce is smooth and fully combined.
- Combine Filling with Sauce: Add 3 tablespoons of the prepared sauce to the chicken mixture and mix thoroughly to coat all ingredients evenly. Reserve the remaining sauce for dipping.
- Assemble Wontons: Divide the filling evenly among the wonton wrappers. Moisten the edges of each wrapper with water to seal, then fold diagonally and press edges firmly to close.
