Description

These Baked Peanut Chicken Wontons are a delightful appetizer combining tender rotisserie chicken, crunchy coleslaw, and chopped peanuts wrapped in crispy baked wonton wrappers. Served with a flavorful creamy peanut dipping sauce with a hint of spicy crushed red pepper, they make a perfect party snack or light meal.

Ingredients

Scale

Wontons

  • 2 tbsp canola oil
  • 1 cup diced rotisserie chicken
  • 1 cup coleslaw mix (found near the lettuce)
  • 1 tbsp peanuts, chopped
  • 30 wonton wrappers

Sauce

  • ¼ cup creamy peanut butter
  • ¼ cup seasoned rice vinegar
  • 2 tbsp soy sauce
  • pinch crushed red pepper

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat the oven to 350 degrees Fahrenheit. Lightly brush a baking sheet with a bit of canola oil to prevent sticking. You may want to have a second baking sheet handy if needed.
  2. Mix Filling: In a mixing bowl, combine the diced rotisserie chicken, coleslaw mix, and chopped peanuts. Stir together until well mixed and set aside.
  3. Make the Sauce: In a separate bowl, whisk together the creamy peanut butter, seasoned rice vinegar, soy sauce, and crushed red pepper until the sauce is smooth and fully combined.
  4. Combine Filling with Sauce: Add 3 tablespoons of the prepared sauce to the chicken mixture and mix thoroughly to coat all ingredients evenly. Reserve the remaining sauce for dipping.
  5. Assemble Wontons: Divide the filling evenly among the wonton wrappers. Moisten the edges of each wrapper with water to seal, then fold diagonally and press edges firmly to close.
  6. Prepare for Baking: Place the filled wontons on the oiled baking sheet(s). Brush the tops of the wontons lightly with the remaining canola oil to help achieve a golden brown finish.
  7. Bake: Bake in the preheated oven for 8 to 12 minutes, turning the wontons once halfway through baking to ensure even crisping. Bake until the wontons are golden brown and crispy.
  8. Serve: Serve the baked wontons hot with the reserved peanut dipping sauce on the side.

Notes

  • Be sure not to overfill the wontons to make sealing easier and prevent leaks during baking.
  • Brushing with canola oil helps the wontons achieve a delicious golden crisp without frying.
  • If you want extra spice, increase the crushed red pepper in the sauce slightly.
  • Using rotisserie chicken saves time and adds a savory flavor.
  • For a gluten-free version, substitute wonton wrappers with gluten-free ones.
  • Leftover filling can be used as a stir-fry ingredient or salad topping.
