Description

  • 812 ounces turkey kielbasa, diced

Macaroni Salad:

  • 1 pound elbow macaroni
  • 1 red bell pepper, seeded and finely chopped

  • 2 tablespoons cider vinegar
  • 1 teaspoon hot sauce
  • 1 teaspoon chili powder
  • 1/8 teaspoon garlic powder
  • Pinch of cayenne pepper
  • 1 cup low-fat mayonnaise
  • 1/2 cup BBQ sauce

Instructions

  1. Cook Turkey Kielbasa: In a skillet, brown the diced turkey kielbasa in canola oil until cooked. Set aside to cool.
  2. Cook Macaroni: Boil macaroni until nearly tender. Rinse with cold water and drain.
  3. Combine Ingredients: In a large bowl, mix macaroni, kielbasa, bell pepper, celery, green onions, vinegar, hot sauce, chili powder, garlic powder, and cayenne pepper. Let sit for 5 minutes.
  4. Add Sauces: Stir in mayonnaise and BBQ sauce. Season with salt and pepper.
