Turkey Kielbasa:
- 8–12 ounces turkey kielbasa, diced
Macaroni Salad:
- 1 pound elbow macaroni
- 1 red bell pepper, seeded and finely chopped
- 1 celery rib, finely chopped
- 4 green onions, sliced thinly
- 2 tablespoons cider vinegar
- 1 teaspoon hot sauce
- 1 teaspoon chili powder
- 1/8 teaspoon garlic powder
- Pinch of cayenne pepper
- 1 cup low-fat mayonnaise
- 1/2 cup BBQ sauce
Instructions
- Cook Turkey Kielbasa: In a skillet, brown the diced turkey kielbasa in canola oil until cooked. Set aside to cool.
- Cook Macaroni: Boil macaroni until nearly tender. Rinse with cold water and drain.
- Combine Ingredients: In a large bowl, mix macaroni, kielbasa, bell pepper, celery, green onions, vinegar, hot sauce, chili powder, garlic powder, and cayenne pepper. Let sit for 5 minutes.
- Add Sauces: Stir in mayonnaise and BBQ sauce. Season with salt and pepper.
- Serve: Serve immediately or refrigerate for up to 2 days. Adjust seasoning before serving if needed.
