  • 1 1/2 tablespoons olive oil, divided

  • 1 medium head cabbage, cored and chopped into 1-inch pieces (about 2 lbs)
  • 3/4 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon red wine vinegar


Instructions

  1. Prepare and Brown Sausage: Halve the kielbasa lengthwise and slice into 1/2-inch pieces. Heat a large deep skillet or Dutch oven over medium heat. Add 1/2 tablespoon of olive oil and the kielbasa. Toss to coat and cook until browned, about 3 minutes per side. Transfer the browned sausage to a plate and set aside.
  2. Sauté Onions and Cabbage: Reduce the heat to medium-low and add the remaining 1 tablespoon of olive oil to the same pan. Add the chopped onion and cook, stirring occasionally, until softened. Then add the minced garlic, chopped cabbage, kosher salt, and black pepper. Toss everything well to combine, cover the pan, and cook, stirring every 4–5 minutes until the cabbage is wilted, about 12 minutes.
  3. Combine and Finish Cooking: Stir in the red wine vinegar to add brightness to the dish. Return the browned kielbasa to the pan, stirring everything together. Cover and cook for about 3 more minutes until the cabbage is tender and the sausage is heated through. Taste and adjust salt if needed. Serve hot.
