Blue Cheese Yogurt:

  • 1/3 cup Greek yogurt
  • 1/4 cup blue cheese, crumbled
  • 1 teaspoon dijon mustard
  • 1 pinch EACH: salt and pepper

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Toss Sweet Potatoes: Place sweet potato strips in a bowl, add olive oil and Cajun seasoning, and mix well.
  3. Bake: Arrange fries on the baking sheet in a single layer and bake for 25-30 minutes until soft and crispy.
  4. Make Blue Cheese Yogurt: In a small bowl, mix together yogurt, blue cheese, dijon, salt, and pepper.

  • If you don’t have Cajun seasoning, you can make your own with paprika, onion powder, garlic powder, thyme, oregano, salt, pepper, and cayenne.
