Sweet Potato Fries:
- 2 medium sweet potatoes, cut into 1/4-inch strips
- 2 tablespoons olive oil
- 1 1/2 tablespoons Cajun seasoning
Blue Cheese Yogurt:
- 1/3 cup Greek yogurt
- 1/4 cup blue cheese, crumbled
- 1 teaspoon dijon mustard
- 1 pinch EACH: salt and pepper
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
- Toss Sweet Potatoes: Place sweet potato strips in a bowl, add olive oil and Cajun seasoning, and mix well.
- Bake: Arrange fries on the baking sheet in a single layer and bake for 25-30 minutes until soft and crispy.
- Make Blue Cheese Yogurt: In a small bowl, mix together yogurt, blue cheese, dijon, salt, and pepper.
- Serve: Top fries with chopped parsley and serve with blue cheese yogurt on the side.
Notes
- If you don’t have Cajun seasoning, you can make your own with paprika, onion powder, garlic powder, thyme, oregano, salt, pepper, and cayenne.
