- 1 cup pasta water
- 1/2 cup cashew cream (or vegan cream)

Instructions
- Heat the oil and cook onions and garlic: In a non-stick pan, melt the olive oil or use water for a lighter version. Add the salt, thinly sliced onions, and minced garlic. Use the oil from the sun-dried tomato jar if available for extra flavor.
- Caramelize the onions: Cook the onions over medium to low heat for about 25 minutes, stirring occasionally until they turn golden brown and caramelized, developing a sweet and rich flavor.
- Cook the pasta: In a separate pot, cook the farfalle pasta according to the package instructions. Reserve at least 1 1/2 cups of the pasta cooking water before draining.
- Deglaze and build the sauce: Add fresh thyme, chopped sun-dried tomatoes, and white wine to the pan with the caramelized onions. Stir to deglaze the pan, loosening all the flavorful bits.
- Add liquids and combine: Pour in the reserved pasta water and cashew cream to create a creamy sauce, stirring gently until fully combined and heated through.
- Mix pasta and greens: Add the cooked pasta to the creamy sauce in the pan. Toss in a handful of spinach or fresh basil leaves, mixing until wilted and evenly distributed.
