Stew Meat:
- 3 pounds stew meat, cut into 1-inch cubes
Veggies:
- 1/4 cup olive oil or vegetable oil
- 1 large onion or 2 small ones, chopped
- 1 medium green bell pepper, chopped
- 4 cloves garlic, minced
- 3 large roma tomatoes, diced
Seasonings:
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons cumin, ground
- 1 1/2 teaspoons chili powder
- 1 tablespoon tomato paste
- 1 cube beef bouillon
- 3 tablespoons all-purpose flour (or more for thicker gravy)
Broth:
- 3–4 cups beef broth, low sodium
Garnish:
- 2 tablespoons fresh cilantro, chopped
Instructions
- Sear the beef: Add 2 tablespoons of olive oil to a skillet. Brown the stew meat on all sides, then set aside.
- Cook the veggies: Add remaining oil. Sauté onion, bell pepper, garlic. Add tomatoes.
- Add seasonings: Salt, pepper, cumin, chili powder, tomato paste, beef bouillon.
- Create gravy: Sprinkle flour, then add 1 cup broth. thicken.
- Cook: Return beef to skillet with 2 cups broth. Simmer for 1.5 hours.
- Garnish and serve: Adjust seasoning, garnish with cilantro, serve with rice and tortillas.
