Description

Carne Guisada is a traditional Mexican beef stew full of flavor from seared beef, aromatic vegetables, and a rich gravy. This hearty dish is perfect for a comforting family meal.


Ingredients

Stew Meat:

  • 3 pounds stew meat, cut into 1-inch cubes

Veggies:

  • 1/4 cup olive oil or vegetable oil
  • 1 large onion or 2 small ones, chopped
  • 1 medium green bell pepper, chopped
  • 4 cloves garlic, minced
  • 3 large roma tomatoes, diced

Seasonings:

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons cumin, ground
  • 1 1/2 teaspoons chili powder
  • 1 tablespoon tomato paste
  • 1 cube beef bouillon
  • 3 tablespoons all-purpose flour (or more for thicker gravy)

Broth:

  • 34 cups beef broth, low sodium

Garnish:

  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Sear the beef: Add 2 tablespoons of olive oil to a skillet. Brown the stew meat on all sides, then set aside.
  2. Cook the veggies: Add remaining oil. Sauté onion, bell pepper, garlic. Add tomatoes.
  3. Add seasonings: Salt, pepper, cumin, chili powder, tomato paste, beef bouillon.
  4. Create gravy: Sprinkle flour, then add 1 cup broth. thicken.
  5. Cook: Return beef to skillet with 2 cups broth. Simmer for 1.5 hours.
  6. Garnish and serve: Adjust seasoning, garnish with cilantro, serve with rice and tortillas.
