Chicken and Seasoning
- 1 1/2 pounds (680 g) chicken breasts, skinless and boneless
- 2 tablespoons fajita seasoning
- 1 tablespoon vegetable oil
Vegetables
- 2 medium bell peppers, cut into strips
- 1 medium yellow onion, sliced
Cheese and Garnish
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or your choice)
- Fresh chopped cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C). Set your oven to the required temperature, ensuring it’s fully heated before baking.
- Prepare the chicken. Season the chicken breasts with fajita seasoning and a tablespoon of vegetable oil. Mix well using your hands to distribute the seasoning evenly.
- Assemble the casserole. Place the seasoned chicken in a baking dish. Top with sliced bell peppers and onions. Sprinkle additional fajita seasoning over the vegetables if desired, then evenly distribute the shredded cheese on top.
- Bake. Place the baking dish in the preheated oven and bake uncovered for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
- Serve garnished. Remove from the oven, let it rest for a few minutes, then garnish with chopped cilantro before serving hot.
Notes
- To ensure the chicken is fully cooked and safe to eat, use a meat thermometer to check that the internal temperature reaches 165°F (74°C).
- Any melting cheese can be used — feel free to customize with your favorite varieties.
- For a lower-calorie version, leave out the cheese, top with Parmesan mixed with panko breadcrumbs, spray with oil, and bake.
- Quick tip: Cubing the chicken into smaller pieces reduces cooking time.
- For serving, pair with garlic butter pasta, plain pasta, rice, Mexican rice, or cauliflower rice for a low-carb option.
- To reheat, warm in the oven at 350°F (175°C) for 15-20 minutes or microwave until hot.
