Potatoes
- 4 medium/large potatoes, cut into cubes

Bacon and Toppings
- 6 strips of bacon, chopped
- 1 cup shredded mozzarella cheese
- Ranch dressing, for drizzling
Instructions
- Prepare the potatoes: Wash and cut the potatoes into cubes. Place them in a bowl and toss with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Cook the potatoes: Preheat the air fryer to 400°F (204°C). Place the seasoned potatoes in the air fryer basket and cook for 20-25 minutes, shaking the basket a couple of times during cooking to ensure even crisping.
- Cook the bacon: While the potatoes cook, chop the bacon strips. Heat a skillet over medium-high heat and cook the bacon until crisp. Remove the bacon from the skillet, leaving approximately 2 tablespoons of bacon grease in the pan.
- Cook the chicken: Add the cubed chicken to the hot skillet with the bacon grease. Season the chicken with salt, pepper, paprika, and dry ranch seasoning. Cook until the chicken is fully cooked through and no longer pink in the center. Remove the skillet from heat.
- Combine potatoes and chicken: When the potatoes are done, add them to the skillet with the cooked chicken. Stir well to combine all ingredients evenly.
- Add cheese and bacon: Sprinkle the shredded mozzarella cheese over the potato and chicken mixture, then top with the cooked bacon pieces.
- Melt the cheese: Place the skillet under the oven broiler for a couple of minutes until the cheese melts and bubbles. Alternatively, cover the skillet with a lid and let it sit on the stovetop until the cheese melts.
- Serve: Divide the skillet contents among plates and drizzle each serving with ranch dressing. Enjoy immediately!

- If you don’t have an air fryer, you can roast the potatoes in a preheated oven at 425°F (220°C) for 25-30 minutes, flipping halfway through.
