Description

This creamy chicken and rice dish is a comforting and flavorful meal that is easy to prepare in just one skillet. Tender chicken, fragrant spices, and creamy Parmesan cheese come together with long-grain rice for a satisfying dinner option.

Chicken:

  • 1 pound chicken breasts, cut into small bite-size cubes
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Rice:

  • 2 tablespoons unsalted butter
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 cup long-grain rice, such as Jasmine
  • 2 cups low-sodium chicken broth
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese

Garnish:

  • Fresh parsley for garnish

Instructions

  1. Prepare Chicken: Season the chicken with sweet paprika, garlic powder, and onion powder. Set aside.
  2. Cook Onions: In a large skillet, melt the butter over medium heat. Add the onion and cook until soft. Add garlic and cook until aromatic.
  3. Cook Chicken: Add the seasoned chicken to the skillet and cook until no longer pink.
  4. Add Rice: Stir in Italian seasoning, rice, and chicken broth. Season with salt and pepper. Bring to a boil, then simmer covered for 15 minutes.
  5. Finish Dish: Stir in heavy cream and Parmesan cheese. Cook until rice absorbs most of the cream. Adjust seasoning with salt and pepper.
  6. Garnish and Serve: Garnish with parsley and serve hot.

Notes

  • Rinse the rice before cooking to remove excess starch.
  • Do not disturb the lid while cooking the rice.
  • Season the dish at the end to avoid over salting.
