Chicken:
- 1 pound chicken breasts, cut into small bite-size cubes
- 1 teaspoon sweet paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Rice:
- 2 tablespoons unsalted butter
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 cup long-grain rice, such as Jasmine
- 2 cups low-sodium chicken broth
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
Garnish:
- Fresh parsley for garnish
Instructions
- Prepare Chicken: Season the chicken with sweet paprika, garlic powder, and onion powder. Set aside.
- Cook Onions: In a large skillet, melt the butter over medium heat. Add the onion and cook until soft. Add garlic and cook until aromatic.
- Cook Chicken: Add the seasoned chicken to the skillet and cook until no longer pink.
- Add Rice: Stir in Italian seasoning, rice, and chicken broth. Season with salt and pepper. Bring to a boil, then simmer covered for 15 minutes.
- Finish Dish: Stir in heavy cream and Parmesan cheese. Cook until rice absorbs most of the cream. Adjust seasoning with salt and pepper.
- Garnish and Serve: Garnish with parsley and serve hot.
Notes
- Rinse the rice before cooking to remove excess starch.
- Do not disturb the lid while cooking the rice.
- Season the dish at the end to avoid over salting.
