  • 4 medium chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

For the Roasted Tomatoes:

  • 10 oz grape tomatoes
  • 1/2 medium onion, chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt + black pepper

For the Creamy Pesto Sauce:

  • 1/2 cup basil pesto
  • 1/2 cup heavy whipping cream
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon red chili pepper flakes (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 400ºF (200ºC) and prepare a baking sheet with grape tomatoes tossed in olive oil, salt, and pepper. Roast for 20 minutes.
  2. Season the Chicken: Season chicken breasts with garlic powder, paprika, salt, and pepper.
  3. Cook the Chicken: Brown the chicken breasts in a skillet until cooked through, about 5 minutes per side. Set aside.
  4. Prepare the Sauce: Caramelize onion in the skillet, add garlic, then stir in pesto, cream, and parmesan. Simmer.
