For the Hot Honey

  • 1/3 cup / 110g Honey
  • 1 1/2 tsp Hot Sauce (Frank's or Cholula)
  • 3/4 tsp Chilli Flakes

For the Chicken

  • 2x 250g/9oz Chicken Breasts, horizontally sliced into 4 fillets
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Cayenne Pepper
  • 35g / 1/4 cup Plain Flour
  • 2 Eggs, beaten
  • 65g / 1 cup Panko Breadcrumbs
  • Veg Oil, as needed (6-8 tbsp)

For the Topping

  • 200g / 7oz Feta, crumbled

Instructions

  1. Prepare the Hot Honey: Combine honey, hot sauce, and chilli flakes in a microwave-safe bowl. Microwave for about 20 seconds, then stir and allow to cool. Alternatively, simmer gently on the stove until heated through, then cool. Adjust heat level to taste.
  2. Prepare the Chicken: Carefully slice each chicken breast horizontally through the center to create 4 even fillets. In a small bowl, mix paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
  3. Set up Dredging Stations: Line up three shallow dishes—one with flour mixed with half of the seasoning, the second with beaten eggs, and the third with Panko mixed with remaining seasoning. Place a large tray at the end for coated chicken.
  4. Coat the Chicken: Dredge each chicken piece through the seasoned flour, then dip into the egg, and finally coat thoroughly with the breadcrumbs. Place on the tray as you go.
  5. Fry the Chicken: Heat oil over medium-high heat in a large skillet. Once hot enough that a breadcrumb sizzles, fry the chicken in batches for 3-4 minutes per side until golden and cooked through. Transfer to a wire rack.
  6. Finish with Feta and Grill: Top the fried chicken with crumbled feta. Place under a high grill until feta is slightly browned and soft, about 2-3 minutes.
  7. Serve: Drizzle the hot honey over the chicken and feta. Serve immediately with your choice of sides.
