Yellow Cake:

Coffee Soak:
- 1/2 cup freshly brewed coffee or espresso
- 2 tbsp coconut sugar
Mascarpone Frosting:
- 8 oz mascarpone cheese
- 2/3 cup powdered sugar
- 1 cup heavy cream
- 1 tsp vanilla extract or vanilla bean paste
To Finish:
- 2–3 tbsp cacao powder (for dusting)
Instructions
- Bake Yellow Cake: Prepare and bake the yellow cake mix as directed on the box. Let it cool.
- Cut Cake Portions: Use coupe glasses to cut out cake rounds.
- Prepare Coffee Soak: Mix coffee and coconut sugar until dissolved. Spoon over cake rounds.
- Make Mascarpone Frosting: Beat mascarpone and powdered sugar, then add heavy cream and vanilla until fluffy.
- Assemble: Pipe frosting on soaked cake rounds, dust with cacao powder.
- Chill: Refrigerate for 30 minutes before serving.
