For the Lamb Chops

  • 8 lamb chops, each approx. 1-inch thick
  • Salt and pepper, to season
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, minced
  • 1 tablespoon fresh rosemary, minced
  • 1 tablespoon olive oil, for cooking
  • 2 tablespoons butter, for cooking


Instructions

  1. Season. Generously season both sides of your lamb chops with salt and pepper to enhance their natural flavor.
  2. Prepare the garlic herb marinade. In a small bowl, mix together the olive oil with the freshly minced garlic and fresh herbs. Use a pastry brush to coat both sides of the lamb chops with this mixture. Discard any leftover marinade and let the chops sit at room temperature for 30 minutes to absorb the flavors.
  3. Cook. Heat a large cast-iron skillet or frying pan over medium-high heat. Add the olive oil and swirl it to coat the surface. When the oil begins to smoke slightly, place the lamb chops in the skillet. Cook until they are lightly browned, about 3-4 minutes. Add the butter to the pan, flip each chop, and continue cooking for another 4-5 minutes or until an internal temperature of 125°F for medium-rare or 135°F for medium is reached, measured with a digital meat thermometer.
  4. Rest. Remove the lamb chops from the skillet and allow them to rest for at least 5 minutes to let the juices redistribute.
  5. Serve. Serve hot with homemade mint chutney or your preferred dipping sauce and enjoy a delicious, herb-infused meal.

Notes

  • If marinating for longer than 30 minutes, cover the lamb chops and refrigerate. Before cooking, bring back to room temperature for even cooking.
