Sauce

  • 1 stick butter (1/2 cup)
  • 2 tbsp fresh minced garlic
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 cup dry white wine (such as chardonnay, pinot grigio, or sauvignon blanc)
  • 3 1/2 cups chicken broth

Rice

  • 1 1/2 cups uncooked white rice

  • 1/2 cup fresh grated Parmesan cheese

Instructions

  1. Season and Cook Chicken: Season the chicken tenderloins with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium heat and sauté the chicken until fully cooked and golden brown. Once done, remove the chicken from the skillet and set aside.
  2. Prepare the Sauce: In the same skillet, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in red pepper flakes and salt, then pour in the dry white wine followed by the chicken broth. Let the sauce simmer and reduce slightly. Reserve about 2 tablespoons of the sauce for finishing the dish, and keep the rest in the skillet.
  3. Cook the Rice: Add the uncooked white rice to the skillet with the sauce mixture and cook briefly, stirring to coat the rice. Then, add the remaining chicken broth. Cover and let the rice simmer gently over low heat until tender and all the liquid is absorbed, about 20-25 minutes.
  4. Assemble and Finish: Once the rice is cooked, sprinkle fresh grated Parmesan cheese over it. Nestle the cooked chicken tenderloins on top of the rice, drizzle the reserved sauce over the chicken, and cover the skillet. Let the dish stand covered for a few minutes to meld the flavors. Garnish with extra Parmesan cheese and fresh parsley if desired before serving.
