Description

These homemade Gingerbread Waffles are a delightful twist on classic waffles, infused with warm spices like ginger, cinnamon, and cloves. Perfect for cozy mornings or holiday breakfasts, they feature a rich molasses flavor and a crisp, golden exterior with a tender inside. Serve them warm with syrup and freshly whipped cream for an irresistible treat.

Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp. baking soda
  • 1 ½ tsp. baking powder
  • ½ tsp. salt
  • 2 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • ⅛ tsp. ground cloves

Wet Ingredients

  • ½ cup unsalted butter, melted
  • 1 cup whole milk, at room temperature
  • 2 large eggs, at room temperature
  • ¼ cup molasses
  • 1 tsp. freshly grated ginger
  • 1 tsp. vanilla extract

Instructions

  1. Mix dry ingredients: In a large mixing bowl, whisk together all-purpose flour, granulated sugar, brown sugar, baking soda, baking powder, salt, ground ginger, cinnamon, and cloves until well combined. Set aside.
  2. Combine wet ingredients: In a large measuring cup or bowl, whisk melted butter, whole milk, eggs, molasses, freshly grated ginger, and vanilla extract until the mixture is smooth and homogenous.
  3. Blend wet and dry mixtures: Pour the wet ingredients into the dry ingredient bowl and whisk thoroughly until the batter is smooth and free of lumps.
  4. Rest the batter: Let the batter rest for 10 minutes to allow the ingredients to meld and for the leavening agents to activate, ensuring light, fluffy waffles.
  5. Preheat waffle iron: While the batter rests, preheat your waffle iron on high heat to ensure it is hot enough to crisp the waffles properly.
  6. Prepare waffle iron & cook: Spray the preheated waffle iron with baking spray to prevent sticking. Use a large portion scoop to fill the iron with batter. Close and cook the waffles for about 5 minutes or until they are deeply browned and crispy.
  7. Keep waffles warm: Transfer the cooked waffles onto a cooling rack set over a baking tray and place them in a warm oven to keep while cooking the remaining waffles, maintaining their crispness.
  8. Serve: Serve the waffles warm with maple syrup and freshly whipped cream or your favorite toppings for a festive breakfast treat.

Notes

  • Leftover waffles can be stored in the refrigerator for up to four days.
  • Freeze leftover waffles in a freezer-safe bag for up to three months to enjoy later.
  • For extra crispiness, reheat waffles in a toaster or oven instead of a microwave.
  • Adjust the amount of molasses to your taste preference for sweetness and depth of flavor.
