Scale
Dip:
- 1 16-ounce can refried beans
- 8 ounces cream cheese (softened)
- 4 ounces sour cream (divided from 8 ounces)
- 2 tbsp taco seasoning
- 12 ounces tomato salsa (or 16 ounces container)
- 2 cups shredded cheddar cheese
- Salt & pepper to taste
Tortilla Tombstones:
- 4 small soft flour tortillas
- 1 tbsp olive oil
Garnishes:
- ½ cup black beans (drained and rinsed)
- ½ cup green onions (chopped)
- ½ cup cilantro (chopped)
- ½ cup assorted cherry tomatoes (halved)
- 4 ounces sour cream (remaining divided portion for topping)
Instructions
- Prepare the Dip Base: In a medium bowl, combine the refried beans, softened cream cheese, 4 ounces of sour cream, and the taco seasoning. Mix thoroughly until smooth and well combined.
- Add Salsa: Gently fold in the tomato salsa to the bean mixture, blending evenly to distribute the flavors throughout the dip.
- Layer the Dip: Spread the bean and salsa mixture evenly in a shallow serving dish. Sprinkle the shredded cheddar cheese evenly over the top to create a cheesy layer.
- Prepare Tortilla Tombstones: Preheat the oven to 375°F (190°C). Brush both sides of the flour tortillas lightly with olive oil. Cut the tortillas into tombstone shapes using a knife or cookie cutter.
- Bake Tortilla Tombstones: Arrange the cut tortillas on a baking sheet in a single layer. Bake for about 10-12 minutes or until they become crispy and golden brown. Remove from the oven and let cool slightly.
- Garnish the Dip: Top the cheesy dip layer with the drained black beans, chopped green onions, chopped cilantro, and halved cherry tomatoes, spreading them evenly for a colorful display.
- Add Sour Cream Topping: Dollop the remaining 4 ounces of sour cream over the dip in small spoonfuls or spread it lightly for a creamy finish.
- Serve: Arrange the baked tortilla tombstones upright into the dip to resemble grave markers. Serve immediately and enjoy your Halloween-themed taco dip!
Notes
- Use softened cream cheese to ensure a smooth dip mixture.
- Adjust the amount of taco seasoning to your preferred spice level.
- You can substitute flour tortillas with corn tortillas if desired for variation.
- This dip can be prepared a few hours ahead and chilled, but add tortilla tombstones just before serving to keep them crispy.
- For a spicier kick, add chopped jalapeños or hot sauce to the dip base.
