Description

This hearty Hobo Casserole combines seasoned ground beef, creamy soups, sliced potatoes, and melted cheese, topped with crispy fried onions for a comforting and easy-to-make family meal that can be customized with your favorite toppings and garnishes.

  • 1 pound lean ground beef
  • Salt and pepper to taste

Potatoes and Cheese

  • 4 medium yellow potatoes
  • 8 oz Colby Jack cheese, freshly grated

Sauces and Seasonings

  • 10 oz can cream of chicken soup
  • 10 oz can cream of celery soup
  • 1/3 cup milk
  • 1/2 teaspoon all purpose seasoning
  • 1/2 teaspoon Worcestershire sauce

Toppings

  • 1/2 cup French’s fried onions

Instructions

  1. Preheat oven to 350°F. Set your oven to the specified temperature to prepare for baking the casserole.
  2. Cook the beef. Add the ground beef to a lightly greased cast iron skillet (10-inch). Break it up and cook until browned, then season with salt and pepper to taste.
  3. Prepare potatoes. Peel and slice the potatoes thinly, then layer them evenly over the cooked ground beef in the skillet.
  4. Add cheese. Sprinkle the freshly grated Colby Jack cheese evenly on top of the potatoes for a melty, cheesy layer.
  5. Mix the sauce. In a large mixing bowl, combine the cream of chicken soup, cream of celery soup, milk, all-purpose seasoning, and Worcestershire sauce. Whisk until smooth and well incorporated.
  6. Assemble the casserole. Spoon the soup mixture evenly over the cheese layer, smoothing with the back of a spoon to cover all the ingredients.
  7. Bake and finish. Cover the skillet tightly with aluminum foil and place it in the oven (set on a baking sheet to catch overspill). Bake for 90 minutes. Then, remove from oven, take off foil, and sprinkle fried onions over the top. Place under a hot broiler for 2-3 minutes until the onions are golden brown.
  8. Garnish and serve. Garnish with chopped green onions or parsley before serving.

Notes

  • If you don’t have a large cast iron skillet, you can transfer the assembled casserole into a 9×13 inch baking dish and follow the same baking instructions.
  • For extra flavor, you can add sliced mushrooms or chopped bell peppers layered with the potatoes.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat in the oven at 350°F until heated through or microwave for quick warming.
