Description

A creamy and flavorful Instant Pot garlic parmesan chicken and rice dish that is quick and easy to prepare. Tender chicken strips cooked with rice, garlic, onions, and a blend of cheeses for a satisfying meal.


Ingredients

Chicken and Rice:

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 2 1/2 cups water
  • 1 1/2 cups heavy cream
  • 1 (10.5-ounce) can cream of chicken condensed soup
  • 2 cups uncooked long grain rice
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 1/2 cups shredded Parmesan cheese
  • 1/2 cup shredded cheddar or colby jack cheese
  • 1 tablespoon chopped fresh parsley
  • 4 ounces cream cheese, cut into chunks and softened

Instructions

  1. Cut chicken into strips: Prepare the chicken by cutting it into strips.
  2. Saute chicken and onion: In the Instant Pot on ‘Saute’ mode, cook chicken and onion until chicken is mostly cooked.
  3. Add ingredients: Add water, heavy cream, chicken soup, rice, garlic powder, onion powder, salt, and pepper. Do not stir.
  4. Pressure cook: Seal the Instant Pot and Pressure Cook on HIGH for 5 minutes. Release pressure manually.
  5. Stir in cheeses: Add cream cheese, Parmesan, cheddar, and parsley. Melt cheeses with lid on for a few minutes. Stir and serve.

Notes

  • Cooking time does not include time for Instant Pot to pressurize. Allow about 10 minutes for pressurization.
