Potato Casserole:
- 1 1/2 lb (700g) fresh diced potatoes
- 1 lb (450g) kielbasa sausage, cut into small pieces
- 1 small onion, diced
- 1/2 tablespoon unsalted butter, diced
Cheese Mixture:
- 2 1/2 cups shredded cheddar cheese
- 1 1/2 to 2 cups (500ml) chicken or vegetable stock
- 1/2 cup (125ml) milk
- 1/4 cup (60ml) heavy whipping cream
- 2 or 3 garlic cloves, minced, optional
- 1 teaspoon Italian seasoning, optional
- 1/2 teaspoon Cayenne pepper, optional
- Salt and pepper, to taste
Instructions
- Prepare Ingredients: Combine diced potatoes, kielbasa sausage, onion, and butter in your Instant Pot.
- Mix Cheese Mixture: In a separate bowl, combine chicken stock, milk, heavy whipping cream, garlic, Italian seasoning, Cayenne, salt, and pepper. Pour over the potato and sausage mixture. Sprinkle with cheddar cheese.
- Cook: Set Instant Pot to stew function for 8-10 minutes until potatoes are tender. Avoid overcooking. Optionally, transfer to a baking dish and broil for 2 minutes for a crispy top.
- Serve: Once cooked, serve the casserole hot and enjoy!
