Instructions

  1. Prepare the Sweet Potatoes: Clean and cut sweet potatoes into ½-inch thick rounds, keeping the skin on or peeling according to preference.
  2. Preheat Oven: Set your oven to 380°F (200°C) to prepare for roasting.
  3. Season the Potatoes: In a bowl or ziplock bag, combine sweet potato slices with melted butter, 1 teaspoon cinnamon, salt, paprika, and pepper. Mix well to coat all slices evenly.
  4. Arrange and Roast: Place the seasoned sweet potato slices in a single layer on a baking tray, leaving small spaces between slices to prevent steaming. Bake for 20-25 minutes until they are firm and tender.
  5. Prepare the Maple-Pecan Topping: While potatoes roast, mix maple syrup, chopped pecans, remaining 0.5 teaspoon cinnamon, and thyme in a separate bowl.
  6. Add Topping and Continue Baking: Remove the tray from oven, top each sweet potato slice with about 1 teaspoon of the maple-pecan mixture, then return to the oven for another 8-10 minutes until caramelized around the edges.
