Description

This rich and cheesy Marry Me Chicken Dip captures all the flavors of the classic Marry Me Chicken dish in an easy-to-make, indulgent dip. Combining tender shredded chicken simmered in flavorful broth and sun-dried tomato oil with creamy cheeses, spinach, and herbs, it’s perfect for parties or comforting snacking.

Ingredients

Scale

Chicken and Seasoning

  • 1 lb boneless skinless chicken breasts
  • 1 tbsp sun-dried tomato oil (from the jar)
  • 3/4 tbsp smoked paprika
  • 1 tbsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Cooking Liquids

  • 2 cups chicken broth

Dip Ingredients

  • 1 cup sour cream
  • 8 oz cream cheese
  • 1 cup spinach (chopped)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 tbsp dry shallots
  • 1 tsp garlic powder
  • 1/2 tsp basil
  • 1 1/2 tsp Italian seasonings
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Cheeses

  • 1 cup parmesan
  • 1 cup mozzarella
  • Additional cheese for topping (as much as you like)

Instructions

  1. Season the chicken: Coat both sides of the chicken breasts evenly with smoked paprika, Italian seasoning, salt, and pepper to build the base flavor.
  2. Sear the chicken: Heat the sun-dried tomato oil over medium heat in a large saucepan. Place the chicken breasts in the pan and sear for 3 minutes on each side until they develop a golden brown crust.
  3. Braise the chicken: Pour in enough chicken broth to almost cover the chicken. Cover the saucepan with a lid and let the chicken braise for 30 minutes or until it is tender enough to shred easily with a fork.
  4. Shred the chicken: Transfer the cooked chicken to a large bowl and use a hand mixer to shred it into bite-sized pieces, creating a perfect texture for the dip.
  5. Prepare the dip: In the same saucepan or a large mixing bowl, combine the shredded chicken with sour cream, cream cheese, chopped spinach, sun-dried tomatoes, dry shallots, garlic powder, basil, Italian seasoning, smoked paprika, salt, pepper, parmesan, and mozzarella. Mix thoroughly until all ingredients are well incorporated and melted together into a creamy dip.
  6. Serve: Transfer the dip to a serving dish and top with additional cheese as desired. Serve warm with crackers, bread, or vegetables for dipping.
