Dip Ingredients
- 1 cup sour cream
- 8 oz cream cheese
- 1 cup spinach (chopped)
- 1/2 cup sun-dried tomatoes (chopped)
- 1 tbsp dry shallots
- 1 tsp garlic powder
- 1/2 tsp basil
- 1 1/2 tsp Italian seasonings
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
Cheeses
- 1 cup parmesan
- 1 cup mozzarella
- Additional cheese for topping (as much as you like)
Instructions
- Season the chicken: Coat both sides of the chicken breasts evenly with smoked paprika, Italian seasoning, salt, and pepper to build the base flavor.
- Sear the chicken: Heat the sun-dried tomato oil over medium heat in a large saucepan. Place the chicken breasts in the pan and sear for 3 minutes on each side until they develop a golden brown crust.
- Braise the chicken: Pour in enough chicken broth to almost cover the chicken. Cover the saucepan with a lid and let the chicken braise for 30 minutes or until it is tender enough to shred easily with a fork.
- Shred the chicken: Transfer the cooked chicken to a large bowl and use a hand mixer to shred it into bite-sized pieces, creating a perfect texture for the dip.
- Prepare the dip: In the same saucepan or a large mixing bowl, combine the shredded chicken with sour cream, cream cheese, chopped spinach, sun-dried tomatoes, dry shallots, garlic powder, basil, Italian seasoning, smoked paprika, salt, pepper, parmesan, and mozzarella. Mix thoroughly until all ingredients are well incorporated and melted together into a creamy dip.
- Serve: Transfer the dip to a serving dish and top with additional cheese as desired. Serve warm with crackers, bread, or vegetables for dipping.
