Easy Greek Chicken
- 1 lb chicken breasts, about 2 large breasts
- 1/2 cup Greek dressing
Rice Bowls
- 2 bags Success Boil-in-Bag White Rice, or 2 heaping cups of cooked white rice
- 1 (15.5 oz) can chickpeas
- 1 large cucumber, chopped
- 1 cup quartered grape tomatoes
- 1/4 cup sliced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup tzatziki
- 1/4 cup hummus
Instructions
- Marinate the chicken: Place the chicken breasts in a bowl or container and pour the Greek dressing over top. Marinate in the refrigerator for at least 1 hour, preferably overnight.
- Prepare the rice: Cook the Success Boil-in-Bag White Rice according to package directions and set aside.
- Cook the chicken: Air fry or bake the marinated chicken breasts until fully cooked.
- Assemble the bowls: Divide the rice, chicken, chickpeas, cucumber, tomatoes, red onion, feta cheese, hummus, and tzatziki into four servings.
