Topping
- 1 tablespoon butter or coconut oil, softened
- 1/2 tablespoon maple syrup or sugar
- 2 tablespoons oats (quick, minute, or rolled)
- 2 tablespoons oat flour (all-purpose flour also works)
- 1 teaspoon cinnamon
Berry Filling
- 1 cup berries of choice, frozen or fresh
- 1/4 cup walnuts, chopped (optional)
- 1/2 tablespoon butter or coconut oil, softened
- 1/2 tablespoon maple syrup, honey, or sugar
- 1/2 teaspoon cinnamon
- Sprinkle of ground ginger
- 1 teaspoon cornstarch
Instructions
- Topping: In a small bowl, mix together topping ingredients until a crumble forms. Set aside.
- Berry Filling: In a separate small microwave-safe dish, combine berry filling ingredients and stir.
- Assembly: Carefully spread the topping over the berry filling. Microwave for about 2-3 minutes until the top is a little crispy and the filling looks cooked (start watching carefully at 1 minute 30 seconds as every microwave is different).
- Serve: Carefully remove from the microwave (it will be hot!) and top with ice cream.
