- 4 skinless salmon fillets
- 1 tsp salt, divided
- 1 tsp black pepper, divided
- 1 tsp sweet paprika
- 1 tsp garlic powder
- 1 tbsp olive oil
- 1 tsp unsalted butter
For the Orzo:
- 1 yellow onion, finely chopped
- 3 garlic cloves, minced
- 1 cup dry orzo pasta
- 1 tsp dried thyme
- 3 cups low sodium chicken broth
- 5 ounces baby spinach
- juice from 1/2 lemon
- 1/2 cup grated Parmesan
- freshly ground black pepper, for serving

Instructions
- Prep: Grate the Parmesan cheese, chop the onion, and mince the garlic. Season the salmon with garlic powder, paprika, salt, and pepper.
- Sear Salmon: Sear the seasoned salmon in oil and butter until cooked. Set aside.
- Cook Orzo: Saute garlic and onion, then add thyme, orzo, and broth. Simmer until orzo is almost cooked.
- Finish Dish: Add spinach, lemon juice, Parmesan, and adjust seasoning. Return salmon to skillet and simmer until heated through.
- Serve: Garnish with black pepper and chili flakes before serving.
