Dry Ingredients
- 1 12oz box vanilla wafer cookies
- 1 1/4 cup pecans
- 2 cups coconut flakes (sweetened or unsweetened)
- 2 cups powdered sugar
Wet Ingredients
- 3/4 cup orange juice concentrate, mostly thawed (about 6 oz)
- 1/2 tsp vanilla extract
- 1 stick unsalted butter, softened
Instructions
- Prepare Crumbs: In a food processor, pulse the vanilla wafers until they become a very fine crumb. Transfer these wafers to a mixing bowl. Then pulse the pecans into a fine crumb and add them to the mixing bowl with the wafers. Finally, pulse the coconut flakes until they are coarsely chopped and place them into a separate shallow dish for rolling later.
- Mix Ingredients: Add the powdered sugar, orange juice concentrate, vanilla extract, and softened butter to the mixing bowl containing the wafer and pecan crumbs. Using a hand mixer, mix thoroughly until all ingredients are well combined and form a cohesive dough.
- Shape Snowballs: Use a small cookie scoop to portion out the dough, then shape each portion into a ball using your hands. Roll each ball in the separately chopped coconut flakes to coat the exterior evenly.
- Chill and Store: Place the coconut-coated balls on a cookie sheet and chill in the refrigerator until firm, about 30 minutes. Once firm, transfer the snowballs to an airtight container and store them in the refrigerator until ready to serve.
Notes
- If only 11oz boxes of vanilla wafers are available, you can add 2-3 sheets of graham crackers to compensate for the missing 1oz.
- Alternatively, use an extra 1/3 cup of powdered sugar to make up for the missing wafers, though this will increase overall sweetness.
- Another option is to buy two boxes of vanilla wafers and use the extra for banana pudding or another recipe.
