  • 1 cup Unsweetened Coconut Milk – shaken or stirred well
  • 2 cups Almond Milk
  • 1 Vanilla Bean – seeds removed
  • 2 TBS Honey (substitute: Pure Maple Syrup)
  • 1/2 cup Chia Seeds

Peaches Topping

  • 3 Peaches – halved, pitted & sliced into 1/2” thick wedges
  • 3 TBS Unsalted Butter
  • 3 TBS Light Brown Sugar – packed
  • 1/8 tsp Cinnamon
  • 2 TBS Almond Syrup (substitute: amaretto for dessert pudding)

Honey Whipped Cream (yield = 2 cups)

  • 1 cup Heavy Whipping Cream
  • 2 TBS Honey
  • 1/4 tsp Vanilla Extract

Instructions

  1. For the Pudding: In a large jar with a tight fitting lid, mix coconut milk, almond milk, vanilla seeds, and honey. Add chia seeds, whisk well, and refrigerate for at least 6 hours.
  2. Cook the Peaches: Melt butter in a skillet, add peaches, sugar, and cinnamon. Cook until caramelized, then add almond syrup.
  3. Make the Honey Whipped Cream: Beat heavy cream, honey, and vanilla until stiff peaks form.
  4. Assemble Peach Puddings: Layer chia pudding, peaches, and sauce in glasses.
  5. Garnish and Serve Pudding: Top with honey whipped cream, caramel sauce, and crushed cookies. Enjoy!

Notes

  • I used fresh unpeeled peaches for marinated peaches. Peeling is optional.
  • Make your own whipped cream for the best taste!
  • Substitute amaretti cookies with almond macaroons or almond biscotti.
  • For a boozy version, use amaretto instead of almond syrup.
