Instructions

  1. Prepare the Cookie Base: Line a cookie sheet with parchment paper. Lay out 1 sleeve of Ritz crackers with the flat side facing up to create a base layer for the sandwiches.
  2. Assemble Sandwiches: Spread about 2 teaspoons of peanut butter evenly on each cracker. Make sure to apply a nice, thick layer for balanced flavor. Then place another cracker on top with the rounded side up to form a sandwich cookie.
  3. Melt the Chocolate: Place the white chocolate melting wafers in a microwave-safe bowl. Heat in the microwave for 1 minute, stir well, then heat for another minute and stir until fully melted and smooth. If desired, add 1-2 tablespoons of coconut oil to help with melting and achieve a glossy finish.
  4. Dip Cookies in Chocolate: Using a fork, carefully dunk each peanut butter sandwich cookie into the melted white chocolate until fully coated. Tap off excess chocolate and set the coated cookie back on the parchment paper. Drizzle any remaining melted chocolate over the cookies for extra decoration.
