- Assemble Skewers: Thread a red bell pepper wedge onto each skewer first, followed by a pepperoni chunk, then the mozzarella-olive ‘eyeball.’ Add a thicker pepperoni slice next, then layer thin pepperoni strips for the base, capping with another mozzarella ball for stability.
