- ⅛ tsp red pepper flakes

- 1 tsp salt

- 1 tsp paprika
- ½ tsp freshly cracked black pepper
- 4 boneless, skinless chicken breasts (about 2 lbs.)
- 1 ½ Tbsp olive oil
Instructions
- Prepare the Spinach Filling: In a small bowl, combine softened cream cheese, parmesan cheese, mozzarella cheese, chopped spinach, pressed garlic, salt, garlic powder, and red pepper flakes. Mix well until fully combined, then set aside.
- Mix Chicken Seasoning: In another small bowl, mix Italian seasoning, salt, garlic powder, paprika, and freshly cracked black pepper. Set this seasoning blend aside for later use.
- Cut Chicken Pockets: Place the chicken breasts on a cutting board and carefully slice a pocket into the side of each breast about three-quarters of the way through, making sure not to slice all the way through to create space for the filling.
- Season Chicken Breasts: Rub olive oil evenly on both sides of each chicken breast. Then, generously coat both sides of the chicken with the prepared seasoning mixture.
- Stuff Chicken Breasts: Evenly divide the spinach and cheese filling and carefully stuff it into the pocket of each chicken breast. Ensure each breast is well filled without overstuffing.
- Bake the Chicken: Place the stuffed chicken breasts into a 9×13-inch baking dish. Bake uncovered in a preheated oven at 400°F (204°C) for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C).
