  • ⅓ cup shredded parmesan cheese
  • ¼ cup shredded mozzarella cheese
  • 2 cups baby spinach, chopped
  • 2 cloves garlic, pressed

  • ⅛ tsp garlic powder
  • ⅛ tsp red pepper flakes

Chicken Seasoning & Main Ingredients

  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp freshly cracked black pepper
  • 4 boneless, skinless chicken breasts (about 2 lbs.)
  • 1 ½ Tbsp olive oil


Instructions

  1. Prepare the Spinach Filling: In a small bowl, combine softened cream cheese, parmesan cheese, mozzarella cheese, chopped spinach, pressed garlic, salt, garlic powder, and red pepper flakes. Mix well until fully combined, then set aside.
  2. Mix Chicken Seasoning: In another small bowl, mix Italian seasoning, salt, garlic powder, paprika, and freshly cracked black pepper. Set this seasoning blend aside for later use.
  3. Cut Chicken Pockets: Place the chicken breasts on a cutting board and carefully slice a pocket into the side of each breast about three-quarters of the way through, making sure not to slice all the way through to create space for the filling.
  4. Season Chicken Breasts: Rub olive oil evenly on both sides of each chicken breast. Then, generously coat both sides of the chicken with the prepared seasoning mixture.
  5. Stuff Chicken Breasts: Evenly divide the spinach and cheese filling and carefully stuff it into the pocket of each chicken breast. Ensure each breast is well filled without overstuffing.
