Marinade:
- 1 kg (2lb) chicken wings
- 1 tbsp oil
- 3 tbsp soy sauce
- 3 tbsp brown sugar
- 2 tbsp lemon juice / lime juice
- 2 garlic cloves
- 2 tsp fresh ginger grated
- 1 red chili
- 1 stalk lemongrass, roughly chopped
- Salt to taste
To Serve:
- 1 cup peanuts, roughly chopped
- 1 red chili, finely chopped (optional)
- 1/2 cup spring onion/green onion, finely chopped
Instructions
- Blend Marinade: Combine oil, soy sauce, brown sugar, lemon juice, garlic, ginger, chili, and lemongrass in a food processor or blender. Blend until smooth. Season with salt.
- Marinate Chicken: Place chicken wings in a bowl, pour the marinade over them, and cover. Marinate for at least 30 minutes, preferably overnight in the fridge.
- Cook Wings: Arrange marinated wings in a single layer in the air fryer basket. Cook at 200°C/390°F for 15-20 minutes, turning halfway, until caramelized and cooked through.
- Toast Peanuts: While wings cook, toast peanuts in a hot pan or oven for 5 minutes until lightly golden.
- Serve: Top cooked wings with peanuts, chopped chili, and spring onions.
