Description

These sticky lemongrass chili air fryer chicken wings are a delightful combination of sweet, spicy, and tangy flavors that will have your taste buds dancing. Marinated in a flavorful blend of lemongrass, chili, soy sauce, and more, these wings are then air-fried to crispy perfection. Topped with crunchy peanuts and fresh herbs, they make a perfect appetizer or main dish.


Ingredients

Marinade:

  • 1 kg (2lb) chicken wings
  • 1 tbsp oil
  • 3 tbsp soy sauce
  • 3 tbsp brown sugar
  • 2 tbsp lemon juice / lime juice
  • 2 garlic cloves
  • 2 tsp fresh ginger grated
  • 1 red chili
  • 1 stalk lemongrass, roughly chopped
  • Salt to taste

To Serve:

  • 1 cup peanuts, roughly chopped
  • 1 red chili, finely chopped (optional)
  • 1/2 cup spring onion/green onion, finely chopped

Instructions

  1. Blend Marinade: Combine oil, soy sauce, brown sugar, lemon juice, garlic, ginger, chili, and lemongrass in a food processor or blender. Blend until smooth. Season with salt.
  2. Marinate Chicken: Place chicken wings in a bowl, pour the marinade over them, and cover. Marinate for at least 30 minutes, preferably overnight in the fridge.
  3. Cook Wings: Arrange marinated wings in a single layer in the air fryer basket. Cook at 200°C/390°F for 15-20 minutes, turning halfway, until caramelized and cooked through.
  4. Toast Peanuts: While wings cook, toast peanuts in a hot pan or oven for 5 minutes until lightly golden.
  5. Serve: Top cooked wings with peanuts, chopped chili, and spring onions.
