Ingredients
Scale
Base Ingredients
- 8 oz cream cheese or coconut cream
- 4 oz yogurt or additional cream cheese or coconut cream
- 1 cup powdered sugar or sugar free alternative
Fruit
- 5 medium size strawberries
Optional Flavoring
- 1/4 tsp vanilla bean paste (optional)
Instructions
- Prepare the Base: If using cream cheese, allow it to come to room temperature for easier blending. If using coconut cream, open the can to ensure the contents are thick and creamy; avoid cans with hard or flaky cream as they won’t yield a smooth mousse.
- Puree the Strawberries: Remove the stems from the strawberries and blend or mash them until fully pureed, ensuring a smooth fruit base for the mousse.
- Combine Ingredients: Add the room temperature cream cheese or coconut cream, yogurt or additional cream cheese/coconut cream, powdered sugar or sugar-free sweetener, and vanilla bean paste (if using) to the pureed strawberries.
- Blend Until Smooth: Use a food processor, blender, or hand mixer to blend all ingredients until the mixture is completely smooth and creamy.
- Chill the Mousse: Transfer the mousse to serving dishes and refrigerate. The mousse will thicken significantly as it chills, enhancing its texture and flavor before serving.
Notes
- Ensure the coconut cream is thick and creamy; cans with separated or flaky coconut cream may not work well.
- Room temperature cream cheese blends more smoothly than cold cream cheese.
- For a lower sugar version, use a sugar-free powdered sugar alternative.
- The mousse benefits from chilling time to thicken, so refrigerate for at least 1-2 hours before serving.
- This dessert can easily be made vegan by using coconut cream and plant-based yogurt.
