Description

Texas Caviar, also known as Cowboy Caviar, is a vibrant and zesty dip packed with black-eyed peas, vegetables, and a flavorful dressing. This versatile dish is perfect for parties, potlucks, or as a refreshing snack.

Ingredients

Units Scale

For the Dip:

  • 2 cups cooked black-eyed peas
  • 1 cup finely diced onion
  • 1 cup finely diced red capsicum
  • 2 medium tomatoes, finely diced
  • 1 deseeded and finely diced jalapeno
  • 1/2 cup packed and chopped coriander leaves
  • 2 spring onions, finely sliced (green parts only)

For the Dressing:

  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons Tabasco sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried oregano
  • 2 teaspoons sea salt flakes
  • Freshly ground black pepper

Instructions

  1. Prepare the Dressing: Combine all dressing ingredients in a bowl and mix well.
  2. Assemble the Dip: In a large bowl, combine black-eyed peas, onion, capsicum, tomato, jalapeno, coriander, and spring onion.
  3. Add the Dressing: Pour the dressing over the vegetable mixture and toss to coat evenly.
  4. Chill and Serve: Refrigerate the dip for at least an hour to let the flavors meld before serving.

Notes

  • For convenience, you can use canned black-eyed peas, but rinsed and drained thoroughly.
  • Opt for red onion and ripe, firm tomatoes for the best flavor.
  • If you prefer less heat, substitute jalapeno with milder peppers like poblano.
  • Tabasco sauce adds a unique tang; however, Sriracha can be a good alternative.
  • Worcestershire sauce lends a sweet-sour note; in a pinch, a mix of ketchup, vinegar, and soy sauce works well.
