For the Dip:
- 2 cups cooked black-eyed peas
- 1 cup finely diced onion
- 1 cup finely diced red capsicum
- 2 medium tomatoes, finely diced
- 1 deseeded and finely diced jalapeno
- 1/2 cup packed and chopped coriander leaves
- 2 spring onions, finely sliced (green parts only)
For the Dressing:
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 3 tablespoons lemon juice
- 2 teaspoons balsamic vinegar
- 2 teaspoons Tabasco sauce
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon dried oregano
- 2 teaspoons sea salt flakes
- Freshly ground black pepper
Instructions
- Prepare the Dressing: Combine all dressing ingredients in a bowl and mix well.
- Assemble the Dip: In a large bowl, combine black-eyed peas, onion, capsicum, tomato, jalapeno, coriander, and spring onion.
- Add the Dressing: Pour the dressing over the vegetable mixture and toss to coat evenly.
- Chill and Serve: Refrigerate the dip for at least an hour to let the flavors meld before serving.
Notes
- For convenience, you can use canned black-eyed peas, but rinsed and drained thoroughly.
- Opt for red onion and ripe, firm tomatoes for the best flavor.
- If you prefer less heat, substitute jalapeno with milder peppers like poblano.
- Tabasco sauce adds a unique tang; however, Sriracha can be a good alternative.
- Worcestershire sauce lends a sweet-sour note; in a pinch, a mix of ketchup, vinegar, and soy sauce works well.
