Description
Toad-in-the-hole is a classic British dish featuring golden, crispy sausages baked in a fluffy, mustard-flavored batter. Served hot and perfect for a comforting dinner, this recipe uses simple ingredients and is ready in under an hour.
Ingredients
Scale
For the Batter
- 150g plain flour
- 3 tsp English mustard powder
- 2 eggs
- 300ml milk
- 3 sprigs thyme leaves, stripped
- A good pinch of salt
For the Sausages
- 8 fat pork sausages
- 2 tbsp sunflower oil
Instructions
- Prepare the batter: In a bowl, mix the plain flour, English mustard powder, and a good pinch of salt. Gradually whisk in the eggs and milk until you achieve a smooth batter. Stir in the stripped thyme leaves to add a fragrant herbal note.
- Cook the sausages: Heat the sunflower oil in a pan over medium heat. Fry the sausages until they turn golden brown on all sides, ensuring they are partially cooked and flavorful before baking.
- Arrange and heat the dish: Place the browned sausages and any remaining oil into the bottom of an ovenproof dish, arranging them evenly with space between each to allow the batter to rise. Preheat the oven to 220°C (fan 200°C) or gas mark 7 and put the dish inside for 5 minutes to heat through.
- Add the batter: Give the batter another quick whisk, then carefully pour it into the hot dish over the sausages. The heat from the dish will help the batter rise beautifully.
- Bake to finish: Return the dish to the oven and bake for 30 minutes until the batter is puffed up, golden brown, and crisp. This creates a perfect balance between the crunchy batter and juicy sausages.
