Description

Tomatoes Provencal is a delightful French dish featuring ripe tomatoes filled with a savory mixture of fresh breadcrumbs, garlic, herbs, and Parmesan cheese, baked to perfection. This recipe combines the essence of Provence with the juicy sweetness of tomatoes for a flavorful and satisfying side dish.

Ingredients

Units Scale

Tomatoes:

  • 4 large tomatoes

Breadcrumb Mixture:

  • 2 garlic cloves
  • 1 small shallot
  • 1 1/2 cups fresh breadcrumbs
  • 1/4 cup chopped parsley
  • 1/2 teaspoon herbes de provence
  • 3 tablespoons grated parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons olive oil

Instructions

  1. Preheat oven: Preheat the oven to 400°F (200°C).
  2. Prepare tomatoes: Core the tomatoes and slice them in half horizontally. Remove the seeds and place the halves on a baking sheet, skin-side down.
  3. Season tomatoes: Sprinkle tomatoes with salt and pepper.
  4. Prepare breadcrumb mixture: Combine garlic, shallot, breadcrumbs, parsley, herbes de provence, parmesan, salt, pepper, and olive oil in a bowl.
  5. Fill tomatoes: Fill each tomato half with the breadcrumb mixture.
  6. Bake: Bake for 20 minutes until golden brown.

Notes

  • To make fresh breadcrumbs, use slightly stale bread for better texture.
  • Herb substitutions can include thyme, chives, or rosemary.
  • For a vegan version, omit or substitute the Parmesan cheese.
  • Best served fresh; leftovers can be refrigerated for a couple of days but may lose crunchiness.
  • Not recommended for freezing due to texture changes.
