  • ½ cup unsalted butter (melted and slightly cooled, plus 3 tbsp melted butter for brushing)
  • ½ cup packed brown sugar
  • 1 ½ cups unsweetened shredded coconut


Instructions

  1. Prepare the Yeast Mixture: In a small bowl, combine warm water, active dry yeast, and 1 tsp granulated sugar. Stir gently and let it sit for about 5-10 minutes until the mixture becomes frothy, indicating the yeast is activated.
  2. Make the Dough: In a large mixing bowl, blend milk, ¼ cup sugar, salt, softened butter, and lightly beaten eggs. Add the activated yeast mixture and stir well. Gradually mix in the all-purpose flour, then add the canola oil. Knead the dough until smooth and elastic, about 8-10 minutes by hand or using a dough hook on a mixer.
  3. First Proof: Cover the dough with a clean kitchen towel or plastic wrap and let it rise in a warm place until doubled in size, about 1 hour.
  4. Prepare the Coconut Topping: In a bowl, mix the brown sugar and shredded coconut. Set aside.
  5. Shape the Rolls: Punch down the risen dough and turn onto a lightly floured surface. Divide dough into 12 equal pieces.
