Description

This Healthy Vegan Cookie Dough is a delicious and guilt-free treat made with almond flour, coconut flour, and maple syrup, blended with melted vegan butter and studded with chocolate chips. Perfectly sweetened and chilled for a delightful texture, this no-bake dessert is easy to prepare and ideal for satisfying your sweet tooth while keeping it vegan and wholesome.

Ingredients

Scale

Dry Ingredients

  • 1 cup blanched almond flour
  • 2 tablespoons coconut flour
  • pinch of salt
  • ¼ cup chocolate chips or to taste

Wet Ingredients

  • 3 tablespoons vegan butter, melted
  • 4 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Melt the Butter: Add the vegan butter to a bowl and melt it in the microwave until fully liquid.
  2. Mix Wet Ingredients: Whisk the melted vegan butter with maple syrup and vanilla extract until smooth and fully incorporated.
  3. Combine Dry Ingredients: Add the almond flour, coconut flour, and a pinch of salt to the wet mixture. Stir well to combine everything into a consistent dough.
  4. Fold in Chocolate Chips: Gently fold the chocolate chips into the dough to evenly distribute them throughout.
  5. Adjust Sweetness: Taste the dough and optionally add a sprinkle of granulated sugar if you prefer it slightly sweeter. Mix again to incorporate.
  6. Chill to Set: Place the cookie dough in the fridge for about 20 minutes to harden and allow the flavors to meld perfectly.
  7. Serve: Transfer the chilled dough to serving bowls or roll into balls for individual portions.

Notes

  • The coconut flour can be substituted with tapioca starch; however, this substitution may alter the flavor and texture slightly.
  • You can customize the sweetness by adding a bit of granulated sugar if desired.
  • Refrigerating is important for the dough to firm up, making it easier to handle and improving flavor blending.
