  • 2 cups 1-inch cubed watermelon
  • 1 8ounce block halloumi cheese, cut into 1 inch cubes
  • Salt and pepper

For the Minted Basil Oil:

  • 1 cup tightly packed sweet basil leaves
  • 1/4 cup fresh mint leaves
  • 1/2 cup olive oil

Instructions

  1. Preheat the grill: to medium-high heat, around 400°F.

  3. Grill the skewers: for 1-2 minutes per side until golden and caramely.
  4. Make the Minted Basil Oil: Blanch basil and mint, then puree with lime zest, olive oil, salt until smooth. Strain and store.
