For the Skewers:
- 2 cups 1-inch cubed watermelon
- 1 8–ounce block halloumi cheese, cut into 1 inch cubes
- Salt and pepper
- Olive oil for drizzling or spraying
- A few fresh mint and basil leaves for skewering
For the Minted Basil Oil:
- 1 cup tightly packed sweet basil leaves
- 1/4 cup fresh mint leaves
- 1/2 cup olive oil
- 1/2 teaspoon freshly grated lime zest
- 1/2 teaspoon salt
- Freshly ground black pepper
Instructions
- Preheat the grill: to medium-high heat, around 400°F.
- Grill the skewers: for 1-2 minutes per side until golden and caramely.
- Make the Minted Basil Oil: Blanch basil and mint, then puree with lime zest, olive oil, salt until smooth. Strain and store.
Skewer the watermelon and halloumi, alternating pieces. Spritz or brush with olive oil, then season with salt and pepper.
Notes
- You can customize these skewers with additional ingredients like balsamic glaze or a sprinkle of chili flakes for extra flavor.
- Make sure the grill is well-heated to get those beautiful grill marks on the halloumi.
